May Cookie of the Month - Chocolate Chip Mug Cookie

Sometimes you are having an absolute craving for homemade cookies but have no desire or time to get into a baking frenzy to make them. Like, when you sit down to watch a movie you are so excited to watch because Netflix just came out with new releases and you finally don’t have to search forever for something to watch and need a treat to go with it. Or, you know, when you head to your bathroom to take a relaxing bath to escape kids, housework, and life just for a moment and want to indulge in a treat that you don’t have to share with anyone, or you are having a really crappy day and need serious comfort food like…NOW! Come on, these are legit and good reasons! The chocolate chip mug cookie is the perfect solution to all these problems because it is easy, quick, and delicious. I admit, the first time I ever tried a mug cooked anything I was super sceptical; but, after playing with a few recipes and getting the right one down, they can be pretty darn good, especially when you are in a pinch. Plus, my kids love making them too, which I love because them asking for homemade cookies has certainly decreased. Yay for mom again!

The name of the game here is to combine, mix, cook, and eat this cookie all out of one mug.

Begin by adding the butter into the mug and melting it in the microwave for about 30 seconds. You want it to melt but not boil in the microwave so don’t put it in there for too long.

Add the sugar, egg yolk, vanilla, and salt; stir with a spoon until combined.

Add the flour. Make sure the flour is level in the measuring cup and even slightly less than the full ¼ cup. Mix well into the batter.

Toss in the chocolate chips and give them a good stir too. Remember I said a few extra? Those are for the top of the batter to be sprinkled on giving the effect that this cookie is loaded with chocolate chips.

Wait! It already is, HAHA! Ok then, it means we are just getting a little fancy here.

Pop the mug into the microwave and cook for 40-60 seconds. After about 40 you want to pull it out and check it; then check it again every ten seconds until it’s done. Mine took about 50 seconds.

It’s fun to watch it expand and grow as it cooks in the microwave like somehow you are surprised it was going to do that. Makes me feel like a kid again! When you first sink your spoon into it for a bit it’s going to feel a bit firm. I think because it’s in a mug you think it should feel like cake but remember, this is a cookie and a yummy one at that!
